Two years in the planning, this sauce was an idea kicked about by me and Jared from Tring Brewery, originally going to be a mango sauce with a beer named Pale Four, and also, was going to be called Apocalypse.
One pandemic later, and plenty of cooking failures, mango was ditched, and pineapple allowed to shine through. The Scotch Bonnet feel as if they cut your throat...hence the new name. Under the guise of 'The Raven King' when labelled for Tring Brewery named after the beer now inside, we couldn't use that name due to our popular 'The Raven' we thought a different label would make sense...
So what can you eat it with? Try over some salad, or grilled fish and seafood.
And...before its release we entered it into this years (2021) Screaming Mimi Awards in New York City, and we won a first placed award in the hot fruit category!
