FOR MEXICAN BRUNCH DISHES
- A medium spiced sauce made with tomatillos and fresh coriander.
Fruity tomatillos give this green sauce a fresh, slightly tart flavour: use for making traditional Mexican brunch dishes like chilaquiles, enchiladas and huevos rancheros.
Heat sauce in a pan over a low heat until simmering. To make chilaquiles, add four handfuls of totopos (corn tortilla chips) and toss to coat. Serve in bowls with crème fraiche, diced onion and fried eggs on top. Serves 2.
